Ingredients: 1 celeriac, 2 leeks, 5 medium onions, ½ head of garlic, 1 bunch each of parsley, chives, and garlic chives, plus other fresh garden herbs to taste. You will also need 10 g of salt per 100 g of the finished vegetable mix.
Wash and trim the vegetables and herbs thoroughly, then roughly chop them. Finely chop everything in batches in a food processor. For an extra-smooth paste, briefly blend the mixture with an immersion blender.
Weigh the finished mixture and thoroughly mix in 10 g of salt per 100 g of vegetable mixture. Fill into very clean screw-top jars, seal tightly, and refrigerate immediately.
This soup seasoning can be used like granulated broth to season soups, stews, sauces, and vegetable dishes. Since it already contains a lot of salt, season the dish to taste afterward. For longer storage, it is best to freeze in small portions.
